Ways with Tomatoes - #3





Tomatoes and pasta! Where would the world be without this combination?

On Friday night we made Pasta Caprese. It's an easy one-dish meal with pasta, tomatoes, and mozzarella. The basic idea is to marinate your seeded and cored tomatoes in a moderate amount of olive oil, lemon juice, finely chopped onions, garlic, salt and pepper. Cook your pasta, cube your mozzarella, and throw it all together. It's a tasty summer dish.

This dish is best served immediately. The leftovers were not worth saving.
